Wicked Good Stuffed Peppers


I am a winger. Yes, a winger. What does that mean? It essentially means I can’t follow a recipe to save my life. Even when I go to the grocery store fully stocked with recipes and meal plans I fail. Miserably. Every single time.

So in turn I work with what I have. I never follow a recipe and about 90% of the time I’m quite pleased with myself. For example, this incredible stuffed peppers recipes that I totally made up was THE BOMB! (Not sure if people use that term anymore but since I’m too old to be cool I just don’t care anymore 😂)

Anyway here’s the recipe–take it–make it–let me know what you thought!

Wicked Good Peppers (yes I just made that up and yes I’m from New England)


6 large peppers-cut the tops off and remove seeds. Set aside.

1 box of fresh white mushrooms (don’t remember what kind-doesn’t matter)
1 bag of frozen sliced peppers
1 bag frozen sweet corn
1 can black beans
1 lb ground turkey
Cumin, smoked paprika, chili powder, pink salt and pepper.

Cook it all in a frying pan. (No, not the big peppers) The order doesn’t matter since I don’t remember anyway and it turned out great.

Preheat over to 350. Stuff all ingredients in peppers. Save leftover ingredients for tacos.
Top with one small cube of Colby Jack pre cubed cheese.
Cook for 15 mins.

Seriously, I’m not a chef BUT these were freaking awesome. I barely measure so just use the spices to taste. A little of this, a little of that. Go for it!




Meatball Feta Wraps

I am so weird. I love food. I’m not picky and honestly most days I just want something to fill my stomach so I can continue onto my next project.

Today I threw together one of the weirdest concoctions ever. But oh my lanta did it pay off. These were so stinking good!

Romaine lettuce wraps with leftover sautéed broccoli from last night, turkey meatballs and feta. Wow wow wow. I love it.

Would you try something like this or did I just totally gross you out?

Oh and ps I was supposed to have 2. I had 3 because I was starving and missed my am snack. I’ll take it—way better than inhaling something terrible. ENJOY!
